Mussels in Tomato and White Wine Sauce

For all the seafood lovers, this mussel dish is the dish for you. Cooked in a delicious spicy tomato, white wine sauce, the succulent mussels soak up all the flavour. Serve with a glass of crisp white wine.

Ingredients
1 kg fresh mussels (cleaned and debearded)
1 can (400 grams) of diced tomatoes
2 tbsp tomato paste
1 tsp dried Italian herbs
1 tsp sugar
1/2 cup of white wine
1 medium brown onion diced
3-4 cloves of garlic minced
1-2 chilli thinly sliced (no seeds)
1/4 cup of fresh parsley plus some to garnish
1/4 fresh lemon juice
2 tbsp butter
Method
In a large pot heat butter until melted and cook onions and garlic for 5 minutes until soft. Add in chilli and cook for another 1 minute.
Add in wine, tomato paste, diced tomatoes and cook for an additional 5 minutes.
Add in Italian herbs, sugar and lemon juice and mix until sugar has dissolved. Season with black pepper and salt to taste.
Add in mussels and parsley and simmer until mussels start opening, gently folding sauce through. Discard of any mussels which do not open.
Garnish with fresh parsley and serve mussels with toasted bread and a wedge of lemon.
