Mexican Avocado Toast with Charred Corn

This recipe is a little bit zesty, a little bit creamy, a little bit smoky, a little bit fresh - but ever so delicious! This breakfast is one of my all time favourites - and is so simple to make!

Ingredients:
sourdough toast
1 avocado per serving
marinated feta
grilled corn (I usually use on of the extra small cans)
spring onions - finely chopped
1/4 fresh lime per serving
smoked paprika
coriander to garnish
Method:
Slice avocado into cubes and scoop onto toast
Meanwhile - grill the corn in a hot pan in a little bit of olive oil. Cook until it begins to char
Sprinkle the corn over the avocado
Crumble the marinated feta on top, and let the infused oil drizzle over the toast and a little around the plate
Top with spring onions and coriander
Shake smoked paprika on top and finish with a good squeeze of lemon juice and salt and pepper
