Baked Gnocchi in Vodka Sauce

A delicious baked recipe with fluffy pillows of potatoes paired with a rich and velvety vodka sauce. Perfect for a cold cozy day.

Ingredients
3/4 cup tomato paste
1/4 cup vodka
1 cup cream
1 cup vegetable stock
1 small brown onion finely diced
3-4 cloves of minced garlic
1 tsp Italian herbs
1 tsp chilli flakes (optional)
salt and pepper to taste
3 tbsp olive oil
1/2 cup fresh mozzarella (cut into small pieces)
1/2 cup of parmesan cheese
500 grams gnocchi (for homemade gnocchi, check out our gnocchi recipe)
handful of basil to garnish
Method
Add oil to a pan and sauté onions and garlic for a few minutes until onions are translucent.
Add in tomato paste and stir for 2 minutes. Add in vodka sauce. Stir and simmer for 3 minutes.
Add in vegetable stock, cream, Italians herbs, chilli flakes, salt and pepper. Bring to a low simmer and cook for 5 minutes. Remove from heat.
Cook gnocchi (check out our homemade gnocchi in blog) in boiling salted water for 1 minute or until slightly tender or as per packet instructions.
Strain gnocchi and add to vodka sauce, stir through gently.
In a baking dish add in gnocchi. Arrange fresh mozzarella over the top before sprinkling fresh Parmesan.
Bake gnocchi for 8-10 minutes until cheese has melted and there is a slight brown colour on the top.
Garnish with fresh basil.
