Anchovy Spaghetti with Kale Chips

A simple yet delicious mid week pasta dish. The saltiness from the Anchovy, sweetness from the tomatoes and the crispy breadcrumbs and kale chips really elevate this pasta dish. We can guarantee this will turn any anchovy haters into fans.

Ingredients

  • 6 anchovies (50grams) fillets in oil minced

  • 6 cloves of garlic minced

  • 1 shallot sliced thinnly

  • 200 grams cherry tomatoes

  • 1/2 cup of parsley chopped (you can also use basil instead)

  • 1/4 cup of extra virgin olive oil + extra for tomatoes

  • 400 grams spaghetti

  • 1 tbsp chilli flakes

  • 1 tsp italian herbs

  • salt and pepper

  • 1/2 cup of panic bread crumbs

  • 1/4 cup of Parmesan (optional)

Kale chips (optional)

  • Bunch of kale chopped into small pieces (do not use stem)

  • 2-3 tbsp olive oil

  • 1 tbsp salt

  • 1 tbsp garlic powder


Method

  1. Preheat oven to 180 degrees.

  2. In a small baking tray cover cherry tomatoes in olive oil add in 1 clove of garlic mince. Toss tomatoes around with salt and pepper and Italian herbs.

  3. Roast tomatoes for 20 minutes or when tomatoes start to blister.

  4. Cook spaghetti as per packet instructions. Save 2 tbsp of pasta water to add into sauce later. Strain and add a drizzle of olive oil so pasta does not stick. Set aside.

  5. Line baking tray with baking paper. Toss in a bowl kale, salt and oil. Make sure kale is gently covered in olive oil and bake until crispy. This takes about 10-15 minutes.

  6. In a pan add oil, once hot add in garlic and shallots. Fry for 3 minutes before adding in anchovies and fry for an additional 5-8 minutes until garlic and shallots become tender. Do not burn or brown.

  7. Add in roasted tomatoes, chilli flakes and parsley and gently mix and cook for 1 minute before adding pasta water to thicken sauce a little.

  8. Add in spaghetti and gently toss. Add in Parmesan and season with salt and pepper to taste and stir through gently.

  9. In another pan add pan bread crumbs and cook until golden for 5 minutes.

  10. Serve pasta with crispy bread crumbs and kale chips and additional cheese.
